PALMOR by Royman

Detail

Royman Leon picks the cherries by hand, one by one. On the farm in Palmor, at 1,300 to 2,000 metres above sea level, they ripen slowly. The Caribbean Sea is a few kilometres away and the warm tropical air mixes here with the cool mountain climate. That slowing down is key. The cherries have more time to develop the sugars you then taste in the cup.

After harvest the cherries go into water. The washed process means the pulp is removed mechanically and the beans ferment for 36 hours in a water bath. During that time naturally present bacteria and yeasts break down the remaining mucilage and write flavour precursors into the bean that no machine can produce. After fermentation the beans are thoroughly washed and dried in the sun.

Farming since
1955

Finca La Eneida lies in the Palmor area of the Sierra Nevada de Santa Marta. The coffee grows at 1,300 to 2,000 metres.

Royman's grandfather founded the farm more than 70 years ago. The family is now in its third generation on the land.

The turning point came with covid. The whole family came back to the farm and decided to take it further. They brought in electricity and the internet and invested in modern coffee processing.

Today Royman grows and processes the coffee with his siblings, carrying on the work of his parents and grandparents.

Palmor is kind of our flagship. Very good coffee, smells lovely and has a pleasant, universal taste. I can drink it every day and never get tired of it. I love it as espresso, but I'll happily brew it as filter or Aeropress too. It's simply a coffee that works for almost everything. Palmor is maybe tied to Evelina a tiny bit more than my other coffees, because it was the first one. :) And it's exactly that pleasant, balanced taste that keeps bringing me back to it again and again :))

First I have to say, I'm no expert. Mild, pleasant taste. I make espresso, but I also tried Fpress and that worked too. There are almost no bad beans in the bag, which is very nice. Yeah, I'd buy it again. I like it.

Very nice coffee. Perfect for espresso and milk-based espresso drinks. Also works well in a moka pot. It's pleasantly sweet with noticeable notes of chocolate. For me - a great coffee for everyday use, both as the first one in the morning and as a coffee for unexpected guests. I wish every coffee was at least this good a quality and tasted as good as this Castillo from the Colombian Sierra Nevada mountains. I have a big sentiment for coffee grown in this region. My journey into the world of coffee started with a coffee from this region that I once received as a gift. Palmor by Leon Royman…

I like the coffee for its balanced taste with minimal acidity. Even preparing it is a celebration for me, so I always take enough time for it. Of course my girlfriend always bakes something good and healthy, this time it was a gluten-free fairy-tale bread with bananas and strawberries.it's a celebration for us, time spent together over good quality coffee.

I'm not an expert but this Evelina coffee is definitely one of the best I've drunk I definitely recommend Mokka from Oskar
Or Palmor from Royman the only problem is that they can't always be ordered 😁
