GEISHA by Andrés

Detail

A Geisha from the El Escondido lot, the highest part of the Cincinnati farm in Colombia's Sierra Nevada. It grows at 1,600–1,700 metres, where cooler temperatures slow the ripening of the coffee cherries and give them time to develop pronounced sweetness and a complex aroma.

It is hand-picked from late December through January, only perfectly ripe cherries.

After the harvest comes precisely controlled processing. The whole cherries first ferment for 48 hours in bioreactors. The pulp is then removed and fermentation continues for another 73 hours dry, with must from the first fermentation added.

Washing and density sorting in channels follow, and finally a slow drying over 16–18 days.

This coffee grows high in the Colombian mountains, on a family farm that has been running since 1898.

The coffee trees don't stand in an open field. They grow in the shade of tall trees, like in a forest.

Most of the farm is forest, water and nature. Coffee takes up only a small part of it. It grows slowly and calmly, and that is where its flavour comes from.

The farm even has its own lab. Every batch is tasted there before it sets off.

I can taste not just jasmine in it, but also green tea. I got a V60 just because of it and it's worth it! It's excellent, light, fresh, we'll definitely buy it again.

I have a sensitive stomach and this was the first coffee that agreed with me, I didn't feel that heaviness like usual. The taste is a bit more acidic than I'm used to, but it doesn't bother me at all, quite the opposite, it's just excellent.

I've loved this coffee from the start, because it was the very first one I tasted at the Cincinnati farm. It was perfectly prepared, fresh, floral, fragrant, and had a beautiful color. When I later found out from Andrés that they might sell it to me, I was thrilled. It's not exactly an everyday coffee, but whenever I brew it using the V60 method, I make myself a big mug and sip it calmly all morning. I don't mind at all that it gradually cools down. Quite the opposite, I enjoy that it's a bit different with every sip.
I love Geisha in general. For its character, its rarity, but also for the…
